Garasuki (or as they are also called, Honesuki) boning knives specifically designed for poultry. They are stiff, robust tools with pointed tips and a somewhat "triangular" profile. Garasuki knives are often single bevel knives but available from us with both right, left, and double sided grinds. They are intended to cut rather than cleave through joints of poultry. To split a bird consider a heavier cleaver or a Deba.
