Honesukis are boning knives specifically made for the task of parting poultry. The honesuki is a stiff and robust knife with pointed tip and trinagular profile. Often single beveled although maybe double sided as well. Users should be fairly knowladgable as to the maintnance of this grind. Honesukis are designed to cut through the joints of a bird but not to cleave bone, in order to split a bird consider a western cleaver or a deba knife.
