Kiritsuke On TCBlades

A Kiritsuke knife is designed to do most cutting tasks in a kitchen. A kiritsuke can be used similarly to a gyuto but is usually thinner from spine to edge which gives it extra slicing abilities, more akin to a Yanagiba. These knives have gained a lot of popularity among Western Chefs over the past few years - and for good reason: They are the "Work Horses" of the kitchen.
