The Sujihiki knife is essentially a double sided Yanagiba, with a square tip. Sujihikis vary widely in design. Their size varries, as well as their tips and their grinds. Our Sujihiki knives are all "square tipped" but available in right, left, and double grinds. Sujihikis are slim from heel to tip. They are traditionaly used for slicing raw fish - but will function brilliantly with most proteins in a Western kitchen as well.
