This is the upgraded finish TC Blades 240mm left handed Yanagiba. This Yanagiba knife is an absolute work horse of a knife, yet is endowed with a high end finish that gives it a very special kind of elegance. A Yanagiba or "Yanagi" is a long and thin knife used in the Japanese kitchen. It's name means "Willow blade". It belongs to a group of knives sometimes called Sashimi hōchō literally meaning "knives to prepare raw fish with". It is used to prepare sashimi, sushi, sliced raw fish and other seafood. The yanagiba blade is ground only from one side, with the other side of the blade being flat. This allows control in the blade angle for delicate cutting and allows for ease of sharpening.
This knife is "old school". The Honyaki blade is made of one single piece of steel not a laminate of hard steel and iron clad - and there in lays the difference. The blade is made of a high carbon tool steel called O1. It is an oil quenching steel considered by many to be a superb choice for kitch knives. We certainly think so.
