Yanagiba

Yanagiba On TCBlades

Yanagibas or as they are sometimes refered to, Sashimi Knives, are traditional style Japanese slicers. They typically display a single sided grind suited for much sharper cutting edges. These knives are used primarily to thinly slice fish, but the Yanagiba gained popularity with western cooks for many other purposes such as carving a roast, for example.
