The term "Spine thickness" refers to the thickness of the knive's blade along it's top side - the side opposing the cutting edge, opposing the bottom of the blade's bevel where the cutting is done. The thickness of the spine influences the weight of the blade and ultimately the "feel" of the blade while it is being used. A thin blade is usually more "springy" and as such more suited for certain tasks than a thicker more rigid blade. On the other hand, a thinner spine is not always a good choice for blades who's primary purpose requires more heft and heaviness.
